 Post subject: \"copy to\" feature

I am interested in the \"copy to\" feature as I have a client who would like a copy of any mail sent to any email address

This is not just a catch all as there will be named email accounts.

Can I use the catch all for un-named accounts and the copy to for a copy of all mail to named accounts?

Yes, both should work as you stated. However, I recommend NEVER use a catch all ... dictionary attacks and spam will become unbearable and you'll have every spammer sending mail to every name in the dictionary @ your domain.
